They're a cold-season vegetable even up north, that does make sense. Maybe one day I'll reveal how to pan-fry spinach in a way that doesn't suck

I typically preheat the oven to 420 F, and the baking sheet along with it. I then put the oiled sprouts cut side down onto the hot sheet and bake for 12-15 minutes, though 15 minutes like that is dangerously close to overcooked
